Sweet-Potato-Chicken-and-Broccoli

I have been working hard to get my whole family to eat healthier, and while for the most part it isn’t too hard to do so, sometimes I feel like I am banging my head against a wall. To be honest, its more so my husband fighting than my fruit and vegetable eating children.

We all love sweet potato baked, I can’t get enough broccoli, and my one year old is on a meat kick… this casserole makes everyone happy.

It is simple to make with very little clean up needed afterwards with this one dish meal.

  • 2 heads Broccoli, cut into florets – or 4 cups of frozen
  • 1 large Sweet Potato, peeled and cut into bite-size cubes
  • 4 chicken breasts, cut into bit size chucks
  • ½ cup Extra Virgin Olive Oil
  • 1-1/2 tsp Garlic Powder
  • ½ tsp Oregano
  • Salt, to taste
  • Black Pepper, to taste
  • Parmesan, optional
Sweet Potato, Chicken & Broccoli

Preheat oven to 375F.

Place chicken, broccoli, and sweet potato cubes in a 9×13 baking dish. Drizzle olive oil over and stir to evenly coat. Spread everything out evenly in the dish. Sprinkle the garlic powder, oregano, salt, and pepper.

Bake in preheated oven for 25 minutes, covered until chicken is cooked and potatoes are tender. Continue cooking for another 10 minutes uncovered to brown potatoes.

Remove from oven and let rest a few minutes before serving. Sprinkle a little Parmesan cheese on top if you’d like.
